Yoshiro Masunaga
A native of Tokyo, Yoshiro Masunaga discovered the art of sushi as a teenager, training in Ginza, one of the meccas of Japanese gastronomy.
Imbued with rigor and elegance, he perfected his skills in exceptional establishments, where precision, silence, and simplicity are the foundations of culinary expertise.
Having settled in France, he joined the Abbaye de Villeneuve to bring Shiki to life, a Japanese trading post that naturally echoes the spiritual values of the place.
The silence, seasonality and sobriety dear to the Cistercian monks find a deep resonance here in Japanese aesthetics and the art of sushi.
